This Week In Dinner: Veggies All the Way

Yup, it's a meat free week at our household. Completely inspired by Carla and Sharon and with the full cooperation of the Sailor, I have planned a vegetarian extravaganza for our family.

Side note: Sailor, you're awesome and I really appreciate you participating in my whims.

I am shooting for two weeks of vegetarianism and maybe more, but we are going to take this a week at a time. I don't think my ultimate goal is to become a vegetarian, but I thought this would be a fun kick start and force me to find more vegetarian meals. I also get to experiment with quinoa and bulgar.

My other goal is to not use as much dairy in our vegetarian meals. When we usually do veggie meals I have a tendency to rely heavily on cheese. It has occurred to me that the Sailor and I might be semi-lactose intolerant, which really isn't all that uncommon, but we have had our share of upset tummies after a dairy loaded meal.

We have two soups this week and instead of using chicken broth I decided to make super easy veggie broth. It probably takes about ten minutes to get all the vegetables chopped and then just simmer for a few hours and done.

Well, that's our plan for this week. Has anybody else been inspired to eat healthier lately? I am really curious to see if a feel any better. I am pretty positive I will.
